Nisin is a polycylic antibacterial peptide, with 34 amino acid residues with major use in food and beverage industry. Two forms of nisin molecules exist in nature: nisin A and nisin Z. Nisin Z differs from nisin A by substitution of asparagine for histidine at position 27. In the food industry, nisin is obtained by culturing Lactococcus lactis on natural substrates, such as dextrose or milk. Nisin was provided with the Generally Regarded as Safe (GRAS) designation in the US Federal Register and is approved as a natural food preservative in 1988. It is also approved as a natural food preservative by Food and Agriculture Organization, World Health Organization and the European Union. Nisin is the most important member of a class of bacteriocins that kills or inhibits growth of other bacteria in food products.
